I’d like to visit a place where the hospitality and flavors have remained unchanged
for decades and even centuries.
Long, long ago, the people who ate at the same table might have thought similar things to us.
Close your eyes because it’s so delicious, and you might just time‑travel…
Today, we’ll introduce “TSURUYA YOSHINOBU ~ TOKYO MISE” in Nihonbashi, Tokyo.
|History
With a history spanning over 200 years, TSURUYA YOSHINOBU is a long-established Japanese confectionery shop founded in Kyoto in 1803.
|Open
TSURUYA YOSHINOBU was founded in 1803, during the reign of TOKUGAWA IENARI, the 11th Shogun of the Edo Shogunate, by the first-generation of TSURUYA IHEI in Kamigyo Ward, Kyoto. Afterward, he is said to have belonged to the Association of High-Class Confectioners (present Kashokai), which was authorized by the Kyoto Shoshidai (Kyoto Magistrate), and dedicated himself to the development of Kyoto confectionery.
In the Meiji era, the third-generation TSURUYA IHEI created “Yumochi,” a mochi rice cake infused with the aroma of yuzu citrus and coated with Wasanbon sugar, which greatly expanded the business.
Furthermore, the fourth-generation owner, INADA GISABURO, created long-selling confections that we can still enjoy today, such as “Fuku wa Uchi” and “Kyo Kanze.”
*The Association of High-Class Confectioners was formed to distribute imported sugar, which was a luxury item at the time.
|About 1803
The year 1803, when Tsuruya Yoshinobu was founded, marked the 200th anniversary of the establishment of Edo.
Overseas, the United States acquired the vast territory of Louisiana, stretching from west of the Mississippi River to the Rocky Mountains, from France. This is said to have roughly doubled the size of the United States’ territory. In Europe, the Napoleonic Wars began, and diplomatic relations between Britain and France were severed. At the same time, the Russian envoy REZANOV was preparing to arrive in Nagasaki, and the Edo shogunate was increasing its vigilance against foreign countries.
In Japan, JIPPENSHA IKKU’s “Tokaidochu Hizakurige,” a humorous travelogue featuring Yaji and Kita, which was published the previous year, became a huge hit, sparking a travel boom. At the same time, a measles outbreak was raging across the country.
Furthermore, according to the “Hitachi no Kuni Utsurobune Kidan (Strange Tale of the Hollow Boat of Hitachi Province)”, recorded in various documents, the Hollow Boat appeared in this year. It is said that a disc-shaped vessel washed ashore on the coast of Hitachi Province (present Ibaraki Pref), and a beautiful woman dressed in unfamiliar clothing emerged carrying a box. They could not communicate, and mysterious characters were written inside the boat.
|TSURUYA YOSHINOBU ~ TOKYO MISE
TSURUYA YOSHINOBU ~ TOKYO MISE in Nihonbashi features a live confectionery demonstration corner called “Kayu Chaya (Fresh Wagashi Counter / Tea Salon)”, where you can enjoy artistic Japanese sweets made right before your eyes, accompanied by matcha tea.
|TSUBARA TSUBARA
“Tsubara Tsubara”, a signature confection from TSURUYA YOSHINOBU, is a baked treat with a surprisingly chewy texture, featuring a rich, flavorful Azuki bean paste made with Hokkaido-grown Azuki beans, wrapped in a soft, moist crust. In addition to the original, there are seasonal limited editions for each season: in spring, there’s “Hana no Tsubara Tsubara”, which is filled with sweet bean paste dyed in cherry blossom pink; in summer, there’s “Tsubara Tsubara Matcha”, infused with stone-ground Uji matcha in both the baked dough and the filling; in autumn, there’s “Tsubara Tsubara Kuri”, which is filled with diced chestnuts in white bean paste kneaded with Japanese chestnuts; and in winter, there’s “Tsubara Tsubara Ringo”, which is filled with apple bean paste containing apple pulp.
